I've added a few bits and bobs (a few of which I've pleaded for help in other threads, so thanks to all who helped!):
  1. Fly screen - Guy in SoCal was selling on eBay and accepted my $40 bid, brand new in shrink wrap. I've found it makes a notable difference at highway and larger local road speeds; I still feel the wind but less like my head's about to pop off from the buffeting.

  2. Touring seat - The only OEM I bought right from the dealer. Worth every penny of the $100 it cost- the added support is fantastic, and no more fidgeting after 30 an hour in the saddle. Highly recommended.

  3. Deluxe foot pegs - Still deciding whether I like them. More comfortable on longer rides, but I find myself too often thinking about where my feet are positioned in stop-and-go traffic. $50 on eBay, although they arrived missing the peg feelers. The Meteor isn't exactly made for peg-scraping, so no big loss.

  4. Rear rack - $50 or so on eBay. It's no precision equipment, but it feels quite sturdy and finish is clean.

  5. Top case: Givi E300n2 monolock (30 l.) - I love that the color scheme matches my Meteor, and chuffed to have some place to stick a bag of groceries or pack a lunch for a day cruise. Found it for $115 on Amazon, brand new, a little cheaper than other vendors. Took some cajoling to get it to sit right on the no-name rear rack (rather than a $240 Givi rack) but it works and it's secure.

It's an old biker tradition. A bell, hanging from the lowest part of the frame, is supposed to scare away gremlins and demons of the road who would cause harm. It's a good luck charm. I like the tradition, and I think it looks cool too ;-)
Oh, fun! Thanks for the explanation. New biker cluelessness. :)
